The history of the world's oldest brewery

In 1040 the monks have purchased a license for beer cooking, and this date is considered the official date of birth of the current brewery. However, documents, documents, and the times were such that the room itself and the equipment has been difficult to maintain: over the next 400 years the monastery Weihenstephan four times is completely burned to the ground, three monks faced with the plague, they even experienced the strongest earthquake! The monastery attacked the Swedes, the French, the Austrians - and each time the walls of the monastery and its brewery was destroyed, and every time after that monks persistently rebuilt all over again.

In 1516, the Bavarian Duke Wilhelm IV issued the most interesting at the time law, which continues to operate today (that's true, with some amendments). The law called "Reinheitsgebot" ( "The commandment of the beer purity") and obliged to use only three ingredients in beer brewing: barley, water and hops. Moreover, the law also stipulates that it is possible to brew beer - "von Michaelis bis auff Georij" - the day of Saint Michael (29 September) to St. George's Day (April 23).

It is this law has led to a special taste of the German and, in particular, the Bavarian beer for centuries. Later, these ingredients are allowed to add the yeast, but no major changes and supplements have not undergone brewing recipes. All beer that was brewed not according to the law, was withdrawn. Every time the monks exceeded the statutory fee for beer, they were forced to pay a fine.

Interestingly, the Reinheitsgebot and still relevant. For German brewery is a real headache, because the law limits the variety of beer and allows you to compete with neighboring countries. Only in 1993, lobbyists managed to achieve small changes in the law that allowed the use of a greater variety of malted grains to create a fermented beer. But even with these revisions to the law, any unnatural ingredient is not approved for use in the German brewing.

After 300 years after the publication of this law, the monastery Weihenstephan bankrupt. In the course of the secularization of the state confiscated the property of the monastery and abbey Weihenstephan has ceased to exist. Nevertheless Weihenstephan Brewery is still thriving, in fact - she has gained new status and became the "Royal Bavarian State Brewery Weihenstephan".

And again, as in the beginning of the creation of the brewery, the whole life around spun around beer. Built near the University of Agriculture and Brewing, in which the most popular professions today are those associated with the production of beer. Weihenstephan brewing became the center of art, and for many years, when the brewery was destroyed and rebuilt again and again, finally gave way to a confident stability and bring more than tangible results.

I wonder what the monks in the Weihenstephan monastery were not the only ones who decided to go into the creation of beer - Bavaria there are at least two other brewery, which also claim to be the oldest in the world. Hofbrauhaus beer is brewed with 1100, and Weltenburg Abbey - 1050. But with the documents there are documents - when in 1040 the monks of Weihenstephan asked for an official license, they have provided the status of his brewery for many years, and today is officially the Weihenstephan brewery in the old world.
